Irish Soda Bread, Marilyn O'reilly's

3 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter
2 tablespoons caraway seed -- optional
1 cups raisins
1 cup buttermilk
1 egg

Set a rack in the middle level of the oven and preheat to 400 degrees.

In a mixing bowl, combine the flour, sugar, baking powder, soda and salt and stir well to mix.

Add the butter and rub in until the butter disappears into the dry ingredients.

Stir in the caraway seeds if used and the raisins.

In a small bowl, whisk the buttermilk and egg together and mix into the dough mixture with a rubber spatula.

Turn the dough out on a floured work surface and fold it over on itself several times, shaping it into a round loaf. Transfer the loaf to one cookie sheet or jelly roll pan covered with parchment or foil and cut a cross in the top. Bake for about 30 to 40 minutes, until well colored and a toothpick plunged into the center emerges clean.

Cool the soda bread on a rack and serve with plenty of sweet butter and bitter orange marmalade.

Yield: One large loaf

Irish Soda Bread

Makes 1 loaf (16 slices)

There are many variations of this traditional Irish bread, but it is nearly always identified by the cross on top of the loaf.

3 tablespoons margarine -- softened
2 1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup raisins -- if desired
3/4 cup nonfat buttermilk

Heat oven to 375º. Grease cookie sheet. Cut margarine into flour, sugar, baking soda, baking powder and salt with pastry blender or 2 knives until mixture resembles fine crumbs. Stir in raisins and enough buttermilk to make a soft dough.

Turn dough onto lightly floured surface. Knead 1 to 2 minutes or until smooth. Shape into round loaf, about 6 1/2 inches in diameter. Place on cookie sheet. Cut an X about one-fourth of the way through loaf with floured knife.

Bake 35 to 45 minutes or until golden brown. Brush with margarine if desired. Remove from cookie sheet; cool on wire rack.

Irish Soda Bread
Serving Size : 8

4 cups flour
4 tablespoons baking powder
1 teaspoon baking soda
3/4 cup sugar
1/4 teaspoon salt
1 box dried currants
1 cup milk
1/2 pint sour cream
2 eggs

Take all dry ingredients and raisins and mix together with fingers. Add milk, sour cream and eggs. Mix with a spoon; batter should be sticky. Grease and dust a 9" cake pan with flour. Pour batter into pan and even out. With a sharp knife, make an "X" across the center 1/2" deep. Bake at 300 to 325 for one hour or until brown.
