I think you could substitute the bacon for sausage in this recipe.


The Carriage House Bed & Breakfast

Breakfast Pie


Ingredients:
1/2 lb. bacon - chopped
1/4 ea. green and red peppers - diced
1 small onion - chopped
8 large eggs - whisked to blend
i lb. russet potatoes, peeled and grated
2 3/4 cup grated sharp cheddar cheese
1/2 tsp. pepper
salt to taste

Preheat oven to 350ƒ. Grease a large quiche dish or 6 to 8 separate ramkins. Cook bacon, green and red peppers, and onion
in a heavy skillet over medium heat until bacon is crisp and onion is translucent, stirring frequently, about 8 minutes.
Transfer to paper towel using slotted spoon. Drain well.

Combine eggs and next four ingredients. Mix in bacon and onion mixture. Pour into prepared dish(es), spreading mixture
evenly. Bake until center is set - 45 minutes for large dish or 20 to 30 minutes for small dishes. Sprinkle a little more grated
cheese over pie(s) last 5 minutes of baking.

Serves 6-8.
