My husband commercial fishes so Ihave learned to do salmon!! I too have a weber grill and this also works over a fire while comping or down at the beach. Take your whole salmon that has been gutted (and gilled if you leave the head on) stuff the belly with onion,green pepper, and lemon slices. Put a few butter slices in there too with some pepper & garlic. Coat the whole outside of the fish with mayonaise. Wrap well with heavy duty foil and put over the coals. It is done when the meat flakes away from the bone. kThere is nothing like fresh caught Alaskan salmon right out of the net!
