I usually steam lobster and serve with drawn lemon butter. But I also fix:

Lobster Newburg

1/4 cup butter, 2 Tbls. all-purpose flour, 1 1/2 cups light cream, 3 beaten egg yolks, 10 oz. cooked lobster, 3 Tbls. dry white wine, 2 tsp. lemon juice, 1/4 tsp. salt, Paprika. Melt butter in saucepan; stir in flour. Add cream all at once. Cook and stir until thick and bubbly. Stir in about 1/2 of the hot mixture into egg yolks; return to hot mixture. Cook and stir until thickened but DO NOT BOIL. Add lobster; heat through. Stir in wine, lemon juice, and salt. Sprinkle with a little paprika. Maybe be served in puff party shells or over rice.

Serves 4
I always double this. Serve with nice green salad.
