Curried Chicken
and Apple Loaves

These loaves are particularly tasty when grilled, but they can also be baked as individual loaves in a 350-degree oven for about 30 minutes or in a traditional 9 by 5-inch loaf pan for about an hour.

6 servings

  • 1 tablespoon vegetable oil

  • 1 onion, chopped

  • 1 tart apple, peeled, cored, and coarsely chopped

  • 2 teaspoons curry powder

  • 1 teaspoon ground cardamom

  • 1 1/2 pounds ground chicken

  • 1 cup whole wheat bread crumbs

  • 1/2 cup chopped prepared mango chutney

  • 1 teaspoon salt

  • 1/4 teaspoon cayenne

  • 1 egg

  • 1/2 cup plain yogurt

  1. Prepare a medium-hot barbecue fire or preheat a gas grill. In a medium skillet, heat the oil and cook the onion and apple over medium heat, stirring often, until the onion is just softened, about 4 minutes. Stir in the curry powder and cardamom and cook for 1 minute more.

  2. In a large mixing bowl, use your hands to gently but thoroughly combine the chicken, bread crumbs, 1/4 cup chutney, salt, cayenne, egg, and cooked onion mixture. Divide into 6 portions and form each into an individual oval loaf. In a small bowl, stir together the remaining chutney and yogurt.

  3. Grill, turning once or twice, until the loaves are cooked through, with no traces of pink, 15 to 18 minutes total. Serve the loaves dolloped with the chutney-yogurt.
