Slightly Thickened Chicken Broth
(Substitute for Oil in Salad Dressings)

This recipe is an excellent substitute for oil in salad dressings. The difference? Only 63 calories instead of 1,900 and no fat whatsoever.

Makes about 1 cup

  • 1 cup fat-free reduced-sodium chicken broth, divided

  • 1 tablespoon plus 2 teaspoons cornstarch

  1. Bring all but 2 tablespoons of broth to a boil in a small saucepan over high heat. Meanwhile, whisk together the 2 tablespoon broth and cornstarch. Gradually whisk the cornstarch mixture into the boiling broth. Boil until the broth is slightly thickened, about 30 seconds. Let cool before serving.

  2. Nutritional information per tablespoon: 4 calories (0% from fat), trace of fat (trace of saturated fat), 0.1 g protein, 0.9 g carbohydrate, 0 mg cholesterol, 25 mg sodium.

Cooking tip: Vegetable broth may be substituted for the chicken broth.
