Makes: 8 servings

  • 1/4 cup ketchup

  • 1 tablespoon brown sugar

  • 1/2 teaspoon dry mustard powder

  • 3/4 pound skinless ground chicken or turkey

  • 3/4 pound extra-lean ground beef

  • 1 cup Italian-style dry bread crumbs

  • 1/2 cup peeled, grated sweet potato or carrots

  • 1/2 cup unpeeled, grated zucchini

  • 1/2 cup minced onions

  • 1/4 cup chopped, fresh parsley

  • 1/4 cup milk (1% or 2%)

  • 2 egg whites

  • 1 teaspoon dried thyme

  • 1/2 teaspoon each dried sage and salt

  • 1/4 teaspoon black pepper

  1. Combine first 3 Ingredients in a small bowl. Set aside.

  2. Using your hands, combine all remaining ingredients in a large bowl. Mix well. Pat mixture Into a 9 x 5-Inch loaf pan. Spread ketchup mixture evenly over loaf.

  3. Bake, uncovered, at 350 degree oven for 1 hour and 10 minutes, until meat is browned and juices run clear.

  4. Pour off liquid in bottom of pan and remove loaf. Slice into 8 pieces and serve immediately.

Per serving: 200 calories, 4.3 g fat, 1.4 g saturated fat, 22.6 g protein, 17.5 g carbohydrate, 1.3 g fiber, 44.4 mg cholesterol, 514.1 mg sodium % calories from fat: 19
