Sausage Sandwiches

This is the most delicious sausage sandwich in the world. Make it and know for yourself.

Servings: 4

  • 4 sweet Italian sausage patties (1/4 pound each)

  • 12 ounces giardiniera (hot pickled vegetable salad), drained (see Note)

  • A handful fresh flat-leaf parsley

  • 1 beefsteak tomato, halved, seeded, and sliced thin

  • 1/2 red onion, sliced very thin

  • Extra-virgin olive oil (a good drizzle)

  • Red wine vinegar (a splash)

  • Pinch of coarse salt

  • Black pepper, to taste

  • 4 leaves green- or red-leaf lettuce

  • 4 crusty rolls, split

  1. Heat a grill pan or skillet over medium-high heat. Place patties on hot pan and cook 6 minutes on each side. Patties may also be cooked over outdoor grill 6 inches from heat for the same cooking time.

  2. Combine giardiniera salad and parsley leaves in a food processor. Pulse into a fine relish.

  3. Toss sliced tomatoes and onions with a little oil and vinegar and season with salt and pepper.

  4. To assemble, coat bottom of roll with chopped relish and top with sausage, tomato and onion slices, lettuce leaf, and roll top. Serve with a chunky vegetable salad and oven fries or root-vegetable chips.

Note: Giardiniera is Italian picked cauliflower, carrots, and peppers in brine. It is available in the Italian foods section of your local market.
