BEAVER TAILS

"Served warm, these rich, sweet treats are similar to American bear claws or elephant ears."

3 1/4 cups all-purpose flour
3 tbsp granulated sugar
3/4 tsp salt
1 egg
1 tbsp butter
3/4 tsp bread machine yeast
Vegetable oil (for deep frying)
About 2 tbsp cinnamon sugar*

Place ingredients in bread machine pan, in order recommended by instruction manual. Select dough cycle.

When finished, remove dough to a lightly floured surface; cover with a large bowl and let rest 10 to 15 minutes.

Divide dough into 10 pieces. Gently stretch dough over your fingertips into 8-by-6-inch ovals (the shape of beaver tails). The edges will be slightly thicker.

In deep fryer or electric skillet, heat at least 3 inches oil to 350 degrees F. Deep fry one beaver tail at a time for 30 to 45 seconds, holding beaver tails under the oil until lightly browned, turning once. Drain well on paper towels.

Sprinkle warm beaver tails with cinnamon sugar mixture or icing sugar.

*To make cinnamon sugar, mix 2 tablespoons sugar with 1/4 teaspoon ground cinnamon.
