PRIME RIB
6 to 8 pound beef rib roast 6 cloves garlic, minced 1 teaspoon cracked black pepper 1 1/2 teaspoons dried thyme
Combine seasonings. Press evenly into surface of roast.
Heat 18 quart Nesco Roaster Oven to 325 degrees F.
Place roast in cookwell. Slow cook 13 to 15 minutes per pound. Use a meat thermometer to check doneness.
130 degrees F. - Rare 135 degrees F. - Medium Rare 140 degrees F. - Medium 150 degrees F. - Well Done

Hi Patti,
This is a recipe from Nesco but I haven't tried it. I would bring the meat too room temperature and brown it before roasting (maybe add the minced garlic after browning), just to be sure it has a good color after cooking. Maybe one of our visitors who has roasted one in a roaster oven will let us know how it turned out. Please share any tips with us if you try it.
