I had two stepdaughters who were extremely picky, so I developed some strategies.
When you make spaghetti sauce, chop up a whole red bell pepper, an onion, a carrot, a stalk of celery and a couple of cloves of garlic. Grind it almost to a puree in the food processor. Cook this very well in olive oil until it is a golden brown color and very, very soft. Then add your tomato sauce (no chunks please) and seasonings. Cook until the little pieces are unrecognizable.
I did the same thing with meat loaf and meatballs. You just have to make the pieces of vegetable unrecognizable.
Finally, I resorted to paying them to taste things. My oldest found out that she absolutely loved polenta with roasted red pepper puree -- she even tried to pay me back once.
I had to pay them $1.00 each to get them to try squid ink pasta.
Just use your imagination when you attempt to disguise vegetables. Is there any vegetable or fruit at all that he is willing to eat? If so, I might be able to help a little more.
