BAGEL CRISPS
4 mini-bagels, plain or flavored Melted butter, olive oil or vegetable oil Oregano, fresh or dried basil, fresh or dried garlic, minced very fine OR garlic powder Salt (optional)
With a sharp knife, slice bagels into thin rings, getting at least 4 rings from each mini-bagel.
Place rings cut side up on baking sheet. Brush well with oil of your choice.* Spread with minced garlic, then add crushed oregano and basil to taste.
Place baking sheets in hot oven (450 degrees F) and bake, watching carefully, until browned and crisp. Remove and serve immediately, or store in refrigerator.
*You also can brush both sides of the bagel with oil for an extra-crispy result.
VARIATIONS: Use any combinations of herbs - tarragon, rosemary, fennel, parsley or snipped chives - as a topping. The use of herb-or chili-flavored oils adds additional flavor.
