FRUITCAKE GOURMET
4 1/2 cups sifted flour 1 teaspoon baking powder 1/2 teaspoon ground cloves 1/2 teaspoon ground mace 1/2 teaspoon ground cinnamon 1 pound butter 1 pound light brown sugar 10 eggs, well beaten 1 pound candied cherries 1 pound candled pineapple 1 pound dates 1/2 pound raisins 1/2 pound citron 1/2 pound candied orange and lemon peel 1/2 pound nuts 1/2 cup honey 1/2 cup molasses 1/2 cup brandy
Preheat oven to 250 degrees F. Line the bottom of two tube pans with waxed paper or parchment paper greased on both sides.
Sift flour, measure, add spices and baking powder, sift three times. Set aside.
Beat eggs well, cream butter, add sugar, honey, molasses and eggs.
Dredge fruit and nuts in 2 cups of the flour mixture. Alternately add flour and brandy. Divide batter between prepared pans.
Bake at 250 degrees F for 2 hours and 30 minutes, or until done.
