BACON PECAN WAFFLES

1 cup flour
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
pinch of salt
1 cup buttermilk
1 large egg
1 Tbsp. vegetable oil
1/2 lb. bacon, cooked crisp and crumbled
1/4 cup finely chopped pecans
Real maple syrup (for serving)

Combine flour, sugar, baking powder, baking soda and salt in a medium mixing bowl; set aside.

Combine buttermilk, egg, and oil. Make a well in the center of the dry ingredients and pour combined wet ingredients into the well, stirring together. Add bacon and pecans quickly. Do not overmix.

Spray non-stick cooking spray on a waffle iron and heat. Pour waffle mixture on waffle iron. Cook until you no longer see steam and the waffle iron is easy to open. Use a fork to lift out the waffle. Keep waffles warm by placing on an oven rack in a warmed oven or an ovenproof dish.

Serve with a grade AA or Fancy maple syrup.
