BLACK-BEAN MANGO SALSA2 cups cooked, rinsed and drained black beans (or canned)
1 cup diced ripe mango
1 cup diced fresh pineapple
1 or 2 jalapeno peppers, seeded and minced
1/2 cup minced red onion
3 tablespoons fresh lime juice
1 tablespoon chopped fresh cilantro (or parsley)
Salt and freshly ground pepper
Combine all ingredients in a glass or plastic container adding salt and pepper to taste. Cover and chill for at least 1 hour.
Makes 4 cups
