Hi Shar:-) I have used the recipe that Judy/Quebec posted with the exception that my recipe calls for 1 c. raisins, 1 c. coconut and 1 c. chopped pecans. My recipe says to bake them at 350 degrees F for 25 minutes or until springy to the touch. This is a wonderful recipe. I made some just last week. You will like them whichever recipe you choose to use:-) They also freeze well. Also, someone, I think Meg/NY suggested that when you thaw muffins, not to seal them in a plastic container or bag but rather just place them on a plate, tray or whatever, and cover them with wax paper. This will keep them from being soggy when they are thawed.
