IRENE: Good Morning. You can break this recipe down in half if you like.
Peach Brandy
6 pounds ripe peaches 13 1/2 Quarts of distilled water (mineral free) 4 1/2 envelopes of yeast or (10,tsp of instant yeast) 7 1/2 pounds granulated sugar 1 pound of un-cooked white rice (Optional)
Slice peaches in half, discard the pits. Place peaches in a large earthen crock. Add all ingredients. (The white rice will imptove the strength of the liquer). Stir to dissolve the sugar. Let stand 10 days. Strain several times using a fine cloth, then bottle brandy in bottles or jars that have been srerilized by the dishwasher ~Chef Dunask.
