Ray, I use chipotle peppers a lot. The amount you use depends on how spicy you like your food. They have a smoky taste. If you leave the seeds in, they can be pretty hot. I usually scrape the seeds out. I generally use 1-2 peppers in a recipe. I sometimes add some adobo sauce, a teaspoon or two, to dishes that are saucey or soupy. Hope that helps some!
