hi! i just wanted to say that the dessert is actually called leche flan. here's a piece of trivia: during the spanish occupation of the philippines, spanish priests ordered the construciton of large churches. the natives used egg whites as binders/ to make adobe (rocks) blocks stick together. they had too many eggyolks, so they invented a recipe using eggyolks. :) the same goes true for another filipino dessert, the "yema", which is made from egg yolks, milk and sugar but boiled until it gets really thick.

incidentally, you can add grated lemon rind to the leche flan mixture for a twist. and you can cook it using a steamer (for about 30 minutes) for a more moist and custardy texture. enjoy!!
