Northern spies are the very best, but I never see them anymore.

Golden delicious also makes a lovely pie, as does Liberty (again, hard to find; it's one of the "new" kinds...but you might find some in a friend's yard if you're really lucky (like me...I have a small tree, but my friend's parents have a good-sized one, and they are delicious for eating, saucing, or baking)
