I make this amish friendship bread every year for christmas gifts and get raves. It requires a starter. Here goes:
Starter
1 cup each, sugar,flour, and milk
1 pkg dry yeast
Place in non metallic bowl and stir well with
wooden spoon. Place damp towel over top.
redampen several times a day.
Day One: Do nothing
Days 2,3,and 4. Stir with wooden spoon once
daily
Day 5, feed with one cup each sugar,milk and flour
Day 6-9 stir with wooden spoon
Day 10 feed again, with same as day 5
Also on day 10
Take out 3 cups mixture and give 2 away. Keep
third for your starter
To remainingingredients add
2/3 cup oil
2 c plain flour
1 cup sugar
3 eggs
1 1/4 tsp baking powder
1 tsp cinammon
1/2 tsp salt
1/2 tsp baking soda
2 tsp vanilla
1 sm box instant vanilla pudding
1 cup chopped pecans
1 cup chopped apples or bannanas or anykind of
fruit
Mix well with wooden spoon. Pour into 2 well
greased and well sugared loaf pans. Bake at
350 for 40 to 50 minutes.
Note: Starter freezes well and is easy to
activate
