Spicy Salisbury Steak
2 lbs ground beef 4 tablespooms onion grated 3 tablespoons finely chopped green capsicum 1 clove garlic, minced 2 tablespoons minced parsley 2 teaspoons salt 1/2 teaspoon freshly ground black pepper 1/4 teaspoon paprika 1/8 teaspoon marjoram
Coating 1/4 cup flour 3 tablespoons olive oil
Sauce 1/2 cup catsup 3 tablespoons butter 1/8 teaspoon hot pepper sauce 1 teaspoon Worcestershire sauce 1/2 teaspoon dry mustard 3 tablespoons dry sherry
Method. Mix together beef, onion, green capsicum, garlic, parsley, salt black pepper, paprika, and marjoram. Form mixture into 6 to 8 'steak shaped' patties about 3/4" thick. Dip lightly into flour and brush with olive oil. Arrange on broiling pan. Broil 3" from source of heat 5 minutes on each side, or to liking. While the meat is broiling, prepare the sauce. In a saucepan combine catsup, butter, hot pepper sauce,Worcestershire sauce and mustard. Cook until butter melts, then stir in sherry. Arrange on hot platter and pour sauce over them. Makes 6 to 8 servings.
