I also did wedding reception food for several weddings (we had a network of friends who helped each other out) and have many outstanding recipes. Here is one that is not seen everywhere and is really Good.

Sweet Cheese Spread

2 pkgs. (8 oz) cream cheese , softened
4 Tbs. fresh orange juice
1 can (16 oz.) fruit cocktail, well drained and chopped
1 pkg. (3oz.) instant vanilla pudding
3/4 cup chopped pecans

Mix all ingredients (except pecans) together. Chill several hours and form into ball with spoon. Coat with pecans or slivered almonds. Serve with Waverly Wafers or other crackers that are not highly flavored. Make one day in advance.

You must be careful to really drain the fruit cocktail or this could be real soupy. I have a pretty glass bowl I use and instead of making a ball, I "bowl" it and sprinkle the nuts on top. Either way ..it's wonderful!

Demo Dip

Strange ingredients ...but this is so good you can eat it with a spoon (my friend does!)

1 can (10 1/2-oz) Campbell's Tomato Soup
8 oz. cream cheese
3 oz. pkg. lemon gelatin
1/2 cup celery, chopped
1/2 cup green pepper, chopped
4 oz. can chopped pimiento
3 small bunches green onions, chopped and include some of the green
Salt and pepper to taste

Heat soup and gelatin; stir until dissolved. Cool. Put in blender and add cream cheese. Blend well. Put in bowl and add rest of ingredients. Chill. Serve with large corn chips ( those scooper kind). or crackers.

Don't chop the veggies in the processor ...it makes the dip real runny. I usually chop them and drain on a paper towel first.
