Good Morning All: I wanted to share a recipe with you that I have made for 15 years. My family and friends all love it. It sounds strange, but it is wonderful.
GRAPE JUICE PIE
3/4 cup sugar 1/4 cup cornstarch 1 1/3 cups grape juice (not grape drink, 100 0/0 grape juice) 1 egg, slightly beaten 3 Tbsp. butter 2 Tbsp. lemon juice 1 tsp. vanilla 1 nine inch pie shell, baked 1 cup whipping cream 1 Tbsp. sugar
Combine sugar and cornstarch in a 2-qt. saucepan. Stir in grape juice; cook over med. heat, stirring constantly, until thickened and bubbly. Cook 1 additional minute. Add a small amount of hot mixture to egg, mixing well; stir egg mixture into remaining hot mixture. Add butter and lemon juice; return to heat. Bring to a boil, stirring constantly; boil 1 minute. Add 1 tsp. vanilla. Stir. Cool. Pour into pie shell; chill thoroughly. Combine Whipping Cream and sugar, beating until light and fluffy. Spread on chilled pie and return to refrigerator till serving. (*Note: I add a little clear vanilla extract, to whipping cream when beating and use; 1 to 2 Tbls. XXX sugar instead of granulated when preparing whipped cream).
