This isn't as bad an artery clogger as my other recipes! Chow Mein 1 c. chopped onion 3-4 stalks celery, chopped 2-3 cups leftover, chicken, turkey or pork (whatever you have in the refrige) 1 tbl. molasses 1 c. water 1 can bean sprouts do not drain 1 can sliced water chestnuts (you can buy whole chestnuts, but I'm lazy, and would just as leave let someone else slice them!) do not drain Soy sauce Saute onion in a small amount of oil until softened, add celery, water. Simmer for 5-10 minutes. Add molasses (this is for color more than anything else), bean sprouts, water chestnuts(with their liquids) and soy sauce to taste. This should cook until the celery has softened a bit. Add the leftover meat just to heat through. Season with a little pepper. You don't really need to add salt because of the soy sauce. Just before you are ready to serve, thicken with cornstarch. Serve over rice.
