LEMON POPPYSEED MUFFINS 1/2 cup softened butter 1 cup sugar 2 eggs 1 T poppyseeds 1 tsp grated lemon peel 4 T lemon juice 1 1/2 cups flour 2 tsp baking powder 1/2 salt ___________________________________________ Preheat oven to 350. Grease or line muffin tin. In large mixing bowl cream butter and sugar. Beat in eggs, poppyseeds, lemon peel & lemon juice. In separate bowl combine flour, baking powder & salt. Stir into creamed mixture. Spoon batter into muffin tin and bake for 15-20 minutes. This will make 6 jumbo muffins or would be wonderful for a shower baked in mini muffin tins. Enjoy!
