Lauren, you did not specify with Gumbo recipe you wanted, so I have posted two for you. Hope you enjoy them, Angel (\o/)
Chicken Gumbo.
Ingredients 1 fowl (3 to 4 lbs) 1/2 cup salt pork fat 1 large onion, sliced finely 1 quart okra, fresh or canned 5 tomatoes, sliced finely 1 cup cream 2 sprigs parsley 3 cups boiling water 1/2 teaspoon pepper 2 tablespoons salt 1 cup boiled rice
Method Cut the chicken into convenient pieces and saute, until brown, in the salt pork fat, then place all the pieces in a saucepan. Saute the onion, slowly, for 10 minutes in the fat. Add okra, tomatoes, and parsley sprigs, and saute these for 30 minutes, very slowly. Drain, then place place them in the saucepan with the chicken. Add the boiling water, salt and pepper. Simmer slowly for 2 to 4 hours, or until the chicken is very tender. Add boiled rice and cream. Taste, add more seasoning if needed. If too thick, add more boiling water. Separate the bones from the chicken. Serve with pieces of chicken in the plate with the soup.

Shrimp Gumbo
Ingredients 6 green onions 2 cups chopped okra 1 tablespoon bacon fat 1 cup chopped tomatoes 6 cups stock 1 pod red pepper 1 green pepper 1/2 teaspoon thyme 1 bay leaf 1 teaspoon salt 1 lb shrimp, cooked
Method Clean onions, reserving the green tops. Chop onions, and saute with the okra in the bacon fat. Add tomatoes, and cook for 5 minutes. Add stock, peppers, green onion tops cut into strips, thyme, bay leaf and salt. Heat to boiling and cook for 10 minutes. Add shrimp, cut into halves, cover closely, and simmer for 1 & 1/2 hours. Serve with rice. Serves 8.
