SWEET VIDALIA ONION AND BROCCOLI SOUP
1 large Vidalia onion, chopped 2 tablespoons butter 2 cups milk 1 1/2 cups boiled chicken, chopped (optional) 2 packages (8-ounce each) cream cheese, cubed 1 (10-ounce) package chopped frozen broccoli, cooked and drained
Salt and Pepper to taste
Saute onion in butter in saucepan until tender. Add cream cheese and milk; stir over low heat until cheese is melted. Add other ingredients and heat thououghly.
(This recipe is from the Vidalia Onion Factory. I found this web site on the internet in 1998. I printed out many of their recipes. Have not tried this one, but all others I have tried were very good.)
