This is my mom's recipe and it is delicious. Make sure all of the ingredients in the cheesecake layer are at room temperature. It will mix together better.
Large Pineapple Cheesecake
Crust:
2 cups graham cracker crumbs 6 Tablespoons butter, melted
Melt butter and add graham cracker crumbs. Press mixture onto bottom and up sides of 9x13 pan. Bake in preheated 400 degree oven for 10 minutes.
Pineapple Layer:
1 cup sugar 2 cans crushed pineapple 3 Tablespoons cornstarch
Mix sugar with pineapple with liquid in a pot. Heat with 3 tablespoons cornstarch. Bring to a boil, stirring until thickend. Turn off and remove from heat while mixing cream cheese mixture.
Cheesecake Layer:
3 (8 ounce) packages cream cheese, room temperature 1 cup sugar 1 teaspoon salt 4 eggs, room temperature 1 cup milk, room temperature 2 teaspoons vanilla
Beat cream cheese, sugar and salt until fluffy. Mix in eggs 1 at a time and stir well. Stir in milk and vanilla.
Spread pineapple mixture into prebaked crust. Pour cream cheese mixture on top of that. Sprinkle with chopped nuts.
Bake in preheated oven at 400°F for 10 minutes, then turn down to 325 degrees for 50 minutes more.
