A Burst in Your Mouth Country Ribs
Need: 2 to 4lbs. PORK Country ribs (don't use shoulder) 2 Lemons Sliced 2 Onions peeled and Sliced 1 1/2 TBSP. Worcestershire sauce 1/2 tsp. Cayenne Pepper ground(find that in the spices dept) 2 Dash Tabasco 1/2 Cup Water 1 (8 oz) can Tomato SAUCE, (not paste) 3/4 cup Ketchup salt and pepper 1 tsp. Dry Mustard 1 large can Pineapple rings in heavy syrup
Preheat oven to 425-450 degrees. Place ribs in baking pan, fat side down. Season with salt and pepper. Brown in oven 1/2 hour or until brown. Turn oven down to 325-350 degrees. Place layers of lemon slices and onions to cover ribs. Mix and pour all the other ingredients EXCEPT PINEAPPLE!, and pour on top of lemons and onions.
(Save some sauce so when it simmers down you can add the rest!) Bake for a minimum of 2 hours, until tender. Basting occasionaly. When tender, pour on can of pineapple rings in heavy syrup and heat 20 more minutes. Takes approxamately 3 1/2 hours.
Serving suggestion, serve with Rice a Roni, but substitue part of the water with a 10 oz can of chicken broth, and DO NOT USE THE MIX PACKET.
