Grannieq -- My mother used to make this recipe at least once a week. My mom used canned spinach. She heated the spinach in a pan, and put in a "glug" (to taste) of vinegar. Not fancy herbed vinegar... plain ol' 1950s vinegar. Mom added the sliced hard-boiled eggs as she put the spinach into a serving bowl. Mom liked to keep the eggs sliced, but I have seen this done with chopped hard-boiled eggs.
