This is a genuine Schwabian potato salad recipe that has been in my family forever. It's simple and delicious, and it has made converts out of people who say they hate potato salad. Unlike Northern German potato salad, this has no sugar. This recipe is rather large, as we make it and have leftovers the next day with German open-face sandwiches, for less, scale down.
Ingredients:
3 lbs potatoes 1 med yellow onion diced 1 tsp black pepper 1/2 C. salad oil 1/2 C. hot water 1-2 tsp dry vegetable buillion 1/2 C cider vinegar (important for taste)
Boil potatoes until desired firmness, peel, and slice. Add diced onion and pepper. Drizzle with oil. Let sit for 5 min. Mix buillion with hot water and pour over potatoes. Add vinegar slowly, mixing as you go, to taste. It's that simple. Enjoy with some grilled brats or Schnitzel and Spaetzle. Prosit!
