I do have a copycat recipe for B&J New York Super Fudge Chunk. Perhaps it can be adapted to come close to Phish Food?

Ben & Jerry's NY Super Fudge Chunk
(Makes 1 qt.)

1/4 cup coarsely chopped white chocolate
1/4 cup coarsely chopped semi-sweet chocolate
1/4 cup chopped pecan
1/4 cup chopped walnuts
1/4 cup chocolate covered almonds, cut in half
4 oz. unsweetened chocolate
1 cup 2% milk
2 eggs
1 cup sugar
2 cups heavy cream
1 teaspoon vanilla
pinch salt

Mix the first 5 ingredients in a bowl, cover, and put in the freezer for at least an hour.
Melt the unsweetened chocolate in a double boiler or in the microwave. While whisking, slowly add the milk. Let cool. In another bowl, whisk the eggs for 1-2 minutes. Add the sugar while slowly whisking, over 1 min. Add cream, vanilla, and salt; whisk to blend. Add the chocolate mixture and blend well.
Cover the bowl, and put in the refrigerator for 1-3 hours. Put in ice cream maker and freeze according to directions. Add candy mixture about 2 minutes before ice cream is ready (while it's spoonable).
