Hi Val :-) Here is a recipe that I found on the internet but have not tried. You will see that it is from someone who tried to recreate the recipe at home. Good luck!
I ate "this" at Denny's and picked at my food so I could try to re-create this dish at home. This is my version. It's soooo good!!
Country Scramble Skillet
8 eggs 1/4 cup milk 1/4 cup green pepper, finely diced 1/4 cup onion, finely chopped 1 cup frozen shredded hash browns, thawed and patted dry 1/4 tsp. salt 1/4 tsp. pepper 1 tbsp. butter 3/4 cup shredded Cheddar cheese 1 cup country gravy (recipe below)
1. In a large bowl, beat eggs and milk together. Stir in onion, green pepper, hash browns, salt and pepper.
2. Heat butter in a large skillet. Pour in egg mixture and cook over medium heat until eggs are cooked through, stirring occasionally to scramble. Re-season with salt and pepper if desired. Stir in cheese and heat until almost melted. Top with gravy. Serve immediately. Yield: 4 servings.
COUNTRY GRAVY
1 tbsp. butter 1 tbsp. flour 1 cup milk 1/2 tsp. beef bouillon granules 1/8 tsp. pepper Dash of salt
1. Melt butter in medium saucepan over medium heat. Whisk in flour until well blended, cooking 1 minute. Gradually add the milk; bring to a boi. Boil for 1 minute, stirring constantly; reduce heat to medium-low. Add bouillon, pepper and salt; simmer for 2 to 3 minutes, stirring occasionally. Use in recipe as directed above.
