Potato Cakes
Ingredients: 1 1/2 pound potatoes, peeled or scraped 2 tablespoons whole wheat flour, plus more for dusting 2 tablespoons 100% bran cereal, crushed 1 small onion, grated 2 tablespoons chopped parsley 1 to 2 teaspoons curry powder salt 3 tablespoons low fat milk oil, for brushing parsley sprigs, for garnish
Soak the potatoes in cold water for 30 minutes to remove some of the starch. Drain, rinse, and dry them, and then grate coarsely into a bowl.
Stir in the flour, bran flakes, onions, parsley, and curry powder to taste, and season with salt. Lastly, stir in the milk and shape the mixture into a round. Divide it into eight equal sized pieces. Brush your hands with flour, and shape the pieces into flat rounds. Sprinkle the potato cakes with whole wheat flour to cover them on all sides.
Lightly brush a non-stick skillet with oil, and heat it over medium heat. Fry the potato cakes for 4 to 5 minutes on each side, until they are evenly brown. Serve them hot, garnished with parsley. (Makes 4 servings)
