This recipe is a favorite of my whole family. You could leave out the sausage for a basic spinach quiche.
1 lb. Webber's sausage 1 lb. fresh spinach leaves, washed and drained 1 tsp. dried chopped onion 3 eggs 1 cup cottage cheese 1/4 tsp. pepper 2 Tblsp. flous 1/2 lb mozzarella cheese, shredded
Cook, drain and crumble sausage, set aside In a food processor, combine eggs, cottage cheese, pepper, flour and mozzarella..Pulse untill mixed. Remove lid of processor and stuff spinach leaves in, close processor and pulse until mixed into cheese mixture, you may have to stuff spinach in two batches. When spinach is finely chopped into cheese misture, add sausage and pulse processore 6 times. Pour into pie crust or baking dish and bake in 400 degree oven for 45 minutes or until brown and knife inserted into center comes out clean.
