Spinach/Almond Quesadillas 1 large bunch spinach 1/3 cup almonds, slivered 1 cup monterey jack cheese, grated 1/4 cup chopped onions 4 tsp cream cheese with chives spread 4 large flour tortillas butter flavored cooking spray Cook spinach in large pot until wilted, then chop finely. Mix spinach, almonds, & chopped onions together.Spread cream cheese on one side of the tortillas. Add spinach mixture to the tortillas & fold over. In skillet sprayed with cooking spray, cook both sides of the quesadillas until brown (or until cheese melts). Remove & cut into 4 pieces. Serve with sour cream & pico de gallo. Serves 2
