Here is a recipe that someone from California posted and I just happened to remember it. This seems pretty nutritious, easy, and inexpensive for dorm room cooking.
Ramen Pad Thai
2 pkg Ramen noodles, any flavor 1 flavor packet or bouillon cube 1 cup coconut milk or soymilk 1/2 cup water 1/2 onion, finely chopped large dollop peanut butter
saute onion in a large pot, stopping while still crunchy. add water, coconut milk or soymilk, flavor packet, and peanut butter. blend until smooth. cook noodles in a separate pot, drain. keep PB mixture at a low boil, uncovered, until it thickens, then add noodles. Enjoy!
