Roasting a pig, turkey or anything is really easier than it sounds. We dig a pit deep enough to hold 6 to 8 inches of hot coals-starting about 9:00 P.M. burn the wood down til you have your bed of coals. Lay a sheet of tin over the coals. Place your meat on the tin. Your meat should be wrapped with three layers of heavy duty foil. place a second sheet of tin over the whole pit. Top the new sheet of tin with dirt to keep the heat from escaping. You have created a nice little oven that will cook your meats to perfection. Go to bed and in the morning-around 10:00 A.M. you should have a wonderful batch of earth oven roasted meat. We usually have just as much fun burning the wood down to make coals as we do at the actual feed. We have had good luck with whole hogs-turkeys-chickens-deer and several other wild meats.
