GRILLED BANANAS1/2 cup light brown sugar 1/4 cup granulated sugar 2 teaspoons ground cinnamon 2 teaspoons ground nutmeg 6 bananas, yellow with slightly green tips 6 tablespoons butter 6 teaspoons rum (optional) Vanilla ice cream (for serving) In a small bowl, mix the brown sugar, granulated sugar, cinnamon and nutmeg; set aside. Using a sharp knife, slit open the peel on the inside curved section of each banana and push the peel open slightly. Spread 2 to 3 tablespoons of the sugar mixture over the banana, pressing it up under the peel. Cut 1 tablespoon of butter into several small pieces and press into the sugar mixture. If desired, drizzle about 1 teaspoon of rum over the opening. Place the bananas, open side up, on a sheet of aluminum foil. Leaving the foil open, place it on the grill rack over hot coals. Cover grill and cook about 10 minutes. (Some of the sugar will spill over and form a crust on the foil. That's OK -- it will peel off when cool.) Remove bananas from foil and serve hot with vanilla ice cream, peeling any hardened sugar off the foil and crumbling it over the ice cream, too.
