What type of ribs did you smoke? Baby backs or Spare Ribs? First, I think you need to get Baby backs and the method that works for me every time to get the meat to absolutely fall off the bone is this:
1. Make sure and remove the membrane 2. Lightly coat ribs with Olive Oil 3. Place Rub on Ribs 4. Start smoker or grill if you don't have a smoker to low. temp (185-200) for 1 and 1/2 hours. Make sure you place ribs bone-side down. Raise temp to med. 225-250 for 2 more hours. Completely wrap ribs in foil, put back on the grill for 1 1/2 to 2 more hours. All of this cooking should be done using indirect heat.
Optional: I sometimes spray the ribs with apple juice but it's not necessary.
Hope it works for you....and if you want to know the best grill to smoke ribs on go to www.traegergrills.com I can't imagine cooking on anything else.
