This recipe was published originally in the Habersham County (GA) Electric Cooperative Magazine. It is by Mamie Doyle, of Ranger, GA.
It is a great item to take to work and share (briefly), or as a welcoming food for new neighbors.
Apple Bread
2 cups flour 1 teasp baking soda 1/2 teasp salt 1/2 cup shortening 1 cup sugar 2 eggs 2 cups chopped (cubed) apples 1 1/2 tablespoons milk 1/2 teaspoon vanilla 1 cup chopped nuts (pecans, of course)
Topping: 3 Tablespoons sugar 1 teaspoon cinnamon
Sift together flour, baking soda, and salt. Set aside.
In another bowl, mix shortening, sugar, and eggs until well-blended. Blend flour mixture into second mixture. Add apples, milk, vanilla, nuts and stir well. Pour into a greased 9x5x3-inch loaf pan.
Mix the topping (sugar & cinnamon) together and sprinkle over batter.
Bake at 350 degrees for one hour.
