Grandma's Orange Zucchini Cake with Orange Cream Cheese Frosting
1 cup flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 3/4 cup sugar 1/2 cup vegetable oil 2 eggs 1/2 cup all bran cereal 1 1/2 tsp. orange peel 1 tsp. vanilla extract 1 cup grated zucchini 1/2 cup chopped nuts
Combine flour, baking powder, soda, salt, cinnamon and nutmeg and set aside.
Beat in sugar, oil and eggs. Stir in cereal, peel and vanilla. Add flour mixture, zucchini and nuts.
Spread in 10x6x2-inch pan (1 1/2 qt.) and bake at 325F for approximately 35 minutes or until done.
Orange Cream Cheese Frosting
1 (3 oz.) pkg cream cheese, softened 1 Tbsp margarine, softened 1/2 tsp orange peel 1 1/2 cups powdered sugar
Beat cheese, margarine, and peel until fluffy. Add sugar and keep beating until mixed. Add 1-2 tsp. milk if needed.
