I, too, love mangos. I'm saving Terry's recipes. Here is one that I make often. MANGO CHEESE TART 1-3oz. Pk. cream cheese 6 Tbs. powdered sugar 1/2 tsp. vanilla 1/2 cup whipping cream 2 large mangos Orange glaze Nut Crust Nut crust: 1/2 cup macadamia nuts or almonds 1 cup flour 2 Tbs. sugar 6 Tbs. butter 1 Large egg Grind nuts in food processor. Add flour and process to blend. Add butter, broken into bits. Process until blended. Add egg and process until a ball forms. Press into bottom and up sides of 9-inch tart pan. Bake at 400°F. about 15 minutes until lightly brown and firm. Cool. Orange Glaze: 1/3 cup sugar 2 Tbs. cornstarch 1 tsp. grated orange peel 1 cup orange juice 1 Tbs. lemon juice Blend sugar and cornstarch. Stir in remaining ingredients. Cook until thickened and clear. Tart: Beat cram cheese until fluffy. Beat in powdered sugar and vanilla. Then beat in whipping cream. Spoon into baked tart shell. Peel and slice mango and arrange neatly over cheese filling. Spoon over warm glaze. Chill. Makes 1 tart.
