1 bag chocolate chips 1 stick butter or margarine 1 7 oz. bag of flaked coconut 1 bag of colored (not flavored) mini marshmallows 1 c. chopped nuts (I used walnuts)
In large bowl, combine 1/2 of the coconut, mini marshmallows, and nuts. Set aside. In saucepan, melt butter and chocolate chips. When melted and smooth, take off stove, and let cool for just a few minutes. Then add chocolate mixture to the coconut/marshmallow/nut mixture. Stir really well to make sure that everything is coated and mixed really well. On two long strips of aluminum foil, sprinkle the remaining coconut. Put half of the cookie mix on one piece of foil, and the other half on the other piece. Roll foil up into tight logs, and place in the fridge for about 1 1/2 to 2 hours. Take out of the fridge and slice into 1/4 to 1/2" slices. Makes about 3 dozen or so.
*note: I stored these in plastic baggies and sent them on trip with my in-laws. I think it would be safe to say that any airtight container would keep them without fear of melting or getting really nasty.
