I have two zoji's and I love them both. My friend teaches bread classes and taught at Williams Sonoma's store. She much prefers the zoji. I do not think the cool down period is a necessary feature I do not like to leave the bread in the machine after it is baked It retains moisture and the crust is not crispy. I take the bread out right away after it is baked. Zoji will also replace your machine without question if you have a problem with it. Good service!
