Kimberly, here are two I have made several times -- for birthdays! LEMON CAKE (from "Under the Tuscany Sun") 1 cup sweet butter, creamed with 2 c. sugar
3 eggs -- beat in one at a time until light
3 c. flour, 1 tsp. baking powder, 1/4 tsp. salt --mix together and mix into batter alternately with 1 cup buttermilk(or cream) ending with flour
3 T. lemon juice grated zest of 1 lemon --mix in last. Pour into non-stick or buttered tube pan. Bake at 300 degrees for 50 minutes. Test with toothpick for doneness. Remove from pan.
Glaze with: 1/4 soft butter 1 1/2 cups xxx sugar 3 T. lemon juice
Decorate with tiny curls of lemon peel.
