I make a pie crust that always gets good comments and although it sounds a little complicated, is really easy:
Mix 2 cups flour and 1 tsp salt in a medium bowl.
Mix 1/2 cup Mazola oil and 1/4 cup water in a measuring cup, then add to flour. Mix with a dinner fork and form into 2 balls, then flatten slightly. Put one ball between 2 sheets of wax paper and roll into a circle a little larger than pie plate. Remove top sheet of wax paper. Flip paper/dough into pie plate and remove other piece of wax paper. Fill pie. Do the same with other piece of dough. Flip onto pie. Cut off extra dough at edge of pie plate. Crimp edge, using thump and 1st finger of left hand against 1st finger of right hand. Cut holes in top for release of steam. Bake.
