Made this recently it was so good just had to share.....
Wholemeal Steamed Marmalade Pudding *****************************************************PUDDING:
Orange - 1, zest only Butter- 75 g (3 oz) Caster sugar - 75 g (3 oz) Eggs - 2, beaten Wholemeal self raising flour - 75 g (3 oz) Dark marmalade - 2 tbsp, beaten Milk - 3 tbsp
SAUCE: Cornflour - 25 g (1 oz) Sugar - 25 g (1 oz) Milk - 450 ml (3/4 pint) Orange - 1, zest and juice
METHOD
Grease a 900 ml (11/2 pint) pudding basin. Place a circle of greased greaseproof paper in the bottom.
Cut away the pith and thinly slice the orange. Use to line the bottom and sides of the basin. Cream the butter and sugar until light and fluffy, add the eggs. Fold in the flour, marmalade, orange zest and milk.
Pour into the basin. Cover with 2 layers of greased foil, tie securely. Place on an upturned saucer in a saucepan with boiling water. Steam for 2 hours.
Blend the cornflour and sugar with 2 tablespoons of the milk. Heat the remaining milk until hot, pour onto the cornflour and return to a clean pan. Heat stirring continuously until the sauce thickens and boils. Stir in the rind and juice of the orange.
Turn the pudding onto a serving plate and serve with the orange sauce.
