your cheesecakes will never crack if you do this.....
put your pan in 2-3 inches of water and bake at 300 degrees until center is set this takes about 2-21/2 hoursgently loosen top edge of cheesecake, let cool at room temperature for an hour or so and then chill.
I promise this works everytime! Pastry Chefs wordof honor!
